blackberry sorbet

Pudding for (virtually) nothing and it’s tasty as can be …

  • Blackberries, freshly picked from the hedgerow, weighed…
  • 125g of sugar per 500g of blackberries,
  • Lemon, juice to taste (around half a lemon per 500g of berries),
  • A dash of water.

Put all ingredients in a sauce pan, heat gently until the fruit softens and begins to give up its juice.

[Optionally] Add a dash of a favourite fruit based liqueur (creme de casis …)

Pass the resultant pulp through a sieve, stir well and place in a freezable container.

Place in the freezer, removing occasionally and stirring well (but don’t stress about how many times you stir it).

You may want to remove from the freezer a while before serving as it’ll set pretty hard.
